The other morning I was in a hurry and didn't have anything planned for breakfast. We were at the end of the paycheck and was out of ideas.
I saw this recipe on Facebook that morning, looked it over and I changed it a little so we could use what we had to make the recipe.
I didn't have ham but we did have two boxes of sausage links, so I took a little time and after frying the links I chopped them up in the pan and used that for my meat.
I also added potatoes to the mix.
Because potatoes take a little time to cook I made sure and cut them up small. With the moisture from the eggs, and the milk, it cooked perfectly.

My 17 month old loved them. I chopped it up for him and he ate two of the muffins.
