The Fake Dutch Oven Chicken Dish. My kids favorite meal.


My kids love chicken. Its one of their favorites. Almost every Sunday we have a whole chicken with potatoes,carrots,and some other vegetables. I try to add zucchini and squash onions and green peppers on occasion, if I'm not out of it already. :)

On the day that I got everything prepared, I reached for the aluminum foil and realized there was none.

I don't know where I got the idea,(probably my husband. I always tell him he would make a great house wife... Lol), or if it just came to me,but I decided to get another 9.5x13.5 glass baking dish and use it as a cover.

Wow!! My husband said its like a dutch oven. The amazing thing is it didn't take very long. I think the first time  I did it I baked it for about 4 hours. Everything was super tender and everything was falling off the bone. The juices were so delicious and all the vegetables were perfect.

My husband and I have a joke about  potatoes.... For some reason me and potatoes don't always see eye to eye. Sometimes their cooked and sometimes not... Ughh. Anyways. My fake dutch oven gives me peace of mind that they will always be cooked.

If you're not a good cook or have just started off in the married life,this is a meal you will never go wrong on.

The Fake Dutch Oven Chicken Recipe.
(Super Detailed instructions)

You'll need two 9.5x13.5 baking dishes
A whole chicken
Seasonings( I use season salt,black pepper,onion powder,paprika,garlic powder,chili powder)
Your favorite vegetables (I use onions,green peppers,potatoes,zucchini, squash,carrots)

Make sure that your chicken is completely thawed.( drain the blood,otherwise you will have an overflow of juice boiling over in your nice clean oven:)) Take out the liver heart neck or whatever is in the chicken... Yuck.. ;)
Sometimes its in there, sometimes not.

Sorry.. Ya.. You have to check. If you're like my husband he loves all that stuff. Once its seasoned,I guess its good..

Next, after you've cut up the vegetables, set them aside until you're ready to season. I love the way the vegetables look. All the different colors. :) (I've watched too many cooking shows :)  

You might be asking how much vegetables should I cut up of each?

Just put in as many as you want. About 3-4 big potatoes is usually plenty for us.
I would say as much as will fit in the dish without falling out.

Next begin seasoning.. I used to measure everything out and it usually turned out pretty good. It really depends on your taste buds though.
Here is a safe proportion of seasonings If you want to use it.
In a bowl mix the following:
1 tblsp of season salt(aldi version has no MSG)
1 tsp of chili powder
1/2 tsp of garlic powder
1/2 tsp of onion powder
1/2 tsp of paprika
1/4 tsp of black pepper
If you have teriyaki sauce or worchestire sauce or even barbecue that would be delicious too. Just rub the sauce on the chicken.  I've done this before and it is great.
Mix together and rub the mix on the chicken.
Add your vegetables to the dish around the chicken and sprinkle the rest of the vegetables with the remaining seasoning mix.

Cover the dish and stick in the preheated oven @375 for 2- 2 1/2 hours, or until internal temp reaches 180. The longer you leave it in,the more tender your chicken is. Your kids will love it and the vegetables are incredible tasting...

P.S. For Sunday lunch. Prepare chicken as listed above but right before you leave put chicken in oven in preheated oven of 270 degrees. When you come back from church, everything is ready... :)
