Freezable Mexican Casserole Recipe- Easy Mexican Casserole For New Moms




I'm always on the lookout for simple and easy to make and filling dinners for our family of 8.

This Mexican Casserole recipe that I found on Pinterest
which of course I saved to my Easy Make Ahead Freezable Meal Board!  I have named it the New Mom's Freezable Mexican Casserole.

1 HUGE reason why I have renamed it..

If you're a new mom and you need a meal that you can freeze on that day when baby won't settle.
This is that meal!!

This Freezable meal is the one you wish you had in the freezer when baby is feeling horrible.


I originally made it just because I homeschool and am home with my 6 children and it seems like I'm always in the kitchen. It is soooo much easier to make "make ahead" meals. When it's done ahead of time, I can do other things like.... Break up arguments.. lol 😮😮


It is absolutely amazing.

If you've been following me for any length of time, you know I can't keep a recipe the same . I always have to change it, because really.... I don't always have the exact same ingredients when I find the recipe and when I feel like trying it.

     Ingredients:
1 pound lean ground beef 
         (Optional Rice- If you want to make this go farther I suggest adding rice.) This is how I make rice.
1/2 lb of pinto beans  
1 can condensed cream of mushroom or chicken soup
1 (12 oz) package corn tortillas
4 cups shredded cheese
3 tablespoons Taco Seasoning
Tortilla Chips on the side if desired
Directions:
1.Cook rice as per package instructions or read my How to make rice post here.
2. Cook beans ahead of time( learn how I make my beans here)
3. Mix all taco seasoning, total, mushroom or chicken soup together and heat.
4. Place a layer of meat mixture on the bottom of a 13x9 casserole baking dish about 1 cup.
5.  Add a layer of corn tortillas.
6. Add the next layer of meat mixture with rice and beans if you choose to add the rice and then cover with some cheese.
7. Repeat the layer of corn tortillas.
8. Put the remaining meat rice and beans mixture on the top and end your layer with the remaining cheese.
9. Place in preheated oven of 350 for about 30-40 minutes.( Or until cheese is melted)
10. You can use tortilla chips on the side.

P.S. I added rice to this dish and I was able to make 2 casseroles out of it.

If you already listened to the audio on "How To Make The Perfect Homemade Beans(with little to no tummy issues)  I used some of the broth from my homemade beans to make sure the corn tortillas were nice and moist. 

If you find that the tortillas are too dry, I would just add more bean broth.

This Mexican Casserole Recipe I changed  a few things on it and it was a hit at our house.
I made two casserole dishes full and ate the other dish a few days later.

The New Mom's Freezable Mexican Beef Casserole

ingredients:
